Younger Than Springtime is Asparagus Barley Soup

Asparagus and barley! Together in song and soup!! Bravo!!

When I was in high school, we performed the famous musical, Soup Pacific. Don’t you just love the music from that show? “I’m Gonna Wash That Soup Right Outta My Hair,” “Some Enchanted Soup-ing,” and “There is Nothing Like Local Soup” are just a few of my favorite songs. I had the good fortune of playing the lead, Ensign Nellie Asparagus. My character falls in love with a mysterious local character, Emile De Mushroom. On the small island of Barley-hai, this kind of relationship was really controversial. However, no one could deny that Ensign Asparagus’ fresh, green, delicate flavors blended so perfectly with Emile’s meaty, earthy tones. And together in Barley-hai, we just worked. Some would say – a new, spring-time twist on an old favorite. Later in the show, Emile reveals that he has others living with him – specifically sherry, soy sauce, and thyme. My character, of course, embraced them as her own. Oh what a glorious production it was. Listen, I don’t want to brag but I think I played a pretty convincing asparagus. Perhaps I missed my calling!

Ingredients (in no particular order): barley, asparagus, mushrooms, thyme, sherry, soy sauce, parsley, carrots, celery, leeks, bay leaves, salt, pepper, canola oil, homemade vegetable stock goodness

I loved this soup! The barley, mushrooms, asparagus and herbs mixed well together and it was so hearty!

  • Kathryn says:

The soup was okay, maybe not as good as your other beautiful soups.

Perhaps this was due to the omission of any asparagus whatever(?)

  • Daiva Balkus says:

Delicious! Needed a bit of salt and pepper, but that’s always ok by me… a little sprinkle of parmesan on top was nice too… :)

  • Heather Bloom says:

    too much thyme

  • Rebecca says:

Very delicious, but this soup would have benefited from a bit of “brightening” – perhaps a handful of chopped dill, or a squeeze of fresh lemon?

  • Debra says:

    A bit bland.

  • Johanna says:

I liked this soup a lot b/c of the strong herb flavor and the subtle (but definitely there) asparagus influence. The mushrooms were great, too. Initially, I thought a little salt would be good, but I decided to eat it as is and enjoyed it every bit as much.

  • Ann says:

This was the only one of your soups that I felt was bland. I added salt and pepper, but agree with Rebecca that it needed “brightening”.

  • Trish says:

This is one of my new faves! Very different flavor from many of the other “hearty” ones I’ve had from Soupergirl. I especially love the mushroom/barley/asparagus combo. I think brightening wouldn’t hurt it, but I don’t feel it needs it either. More, please!

  • Jen says:

YUM!!! Loved the big chunks of asparagus and mushrooms!

  • Leon Fleischer says:

The entire family loved this soup.l The mushroom/barley/asparagus combo was delicious. Please have again.

Not one of my favorites so far. I’d probably skip next time. I’m not a mushroom fan so that likely influenced me.
