Another true story… I was doing some web surfing over the weekend and found the original lyrics to the Beatles’s song, Yellow Submarine. I just had to share them with you:
In the farm where I shop
Lives a man, who sells great squash
He told me to cook it up
With some potatoes, turmeric, small hot pepper, and tahini…
We all live in a yellow squash machine
Pureed up as though there’s cream, pureed up up as though there’s cream
We all live in a yellow squash machine
But it has no cream, I swear there is no cream
I mean, after I found that song, what else could I do? Yeah, I made the soup. And wow, it sure is good.
Ingredients (in no particular order): yellow summer squash, garlic, celery, potato, celery, onion, oregano, turmeric, tahini, salt, pepper, vegetable oil, homemade vegetable stock goodness
Soup type: Cold, Pureed

dee-lish! Ate 2/3 of the quart for lunch, and my 3-yr old polished off the rest for dinner, along with the pita chips she loves so much. Loved this one!
Genius use of some v disparate ingredients…tastes awfully creamy w/nary a touch of the stuff…will have to find something else to feel guilty about. This one was excellent, guilt-free and really tasted of summer squash.
