Do you guys remember the whole Y2K scare? People thought the computers were going to explode or take over the world. We would all be ruled by robots, like a bad Will Smith movie. The evil robots would force us to do crazy things like plant trees upside down, put leashes on cats, and add butter beans to our mushroom barley soups. Madness! Total madness!! Thank goodness the computers behaved. Unfortunately, the Souperkitchen wasn’t so immune to the Y2K insanity. When we woke up on January 1, 2001 we found that some butter beans had mysteriously entered the mushroom barley soup in our refrigerator. And thank goodness they did!! I mean, the mushroom barley soup is pretty delish as is, with the sherry, soy sauce, and “meaty” flavor. But with butter beans? A whole new bowl of soup! Huge, fun butter beans dancing around the bowl! Plus, I get to say “butter bean” over and over again. Say it with me! “Butter bean!” Can’t stop, can you??
Ingredients (in no particular order): butter beans, barley, mushrooms, sherry, soy sauce, Tabasco sauce, cloves, cider vinegar, carrots, celery, onion, bay leaves, parsley, garlic, salt, pepper, olive oil, onion

I really enjoyed this soup. It tasted ckicken-y to me even though there is no chicken in it. Warm and filling! It is the kind of comfort food that is perfect for a cold week. Please make more barley soups!!
Tasty soup. My one complaint is that it lacked the usual delicious seasoning that I have come to love in your soups.
was a great, comforting soup for such a cold week….but I do agree w/above writer…lacked the usual “umph” from most other souper girls soups…not that everything has to be highly spiced…just was missing that element of surprise I alwasy enjoy in the soups.
please, please, please, please, please repeat… SOON! My husband, daughter and I all went gaga for this soup. It was hearty, tasty and filling. My daughter is 2 and could not get enough!
