This soup was inspired by my recent safari trip in Africa. It was wild! We got up really, really early one morning to see the little baby sweet potatoes playing by the river. It got a little scary when a pack of wild tomatoes came upon them. Luckily, the tomatoes were just there for some water. A few hours later a hummus of chickpeas (hummus is the word for a pack of chickpeas – like a “herd of cows..”), surrounded our jeep. I was SO SCARED! But our driver remained calm and said that chickpeas are really friendly on account of their high protein content. Phew! The day ended at a peanut farm where I got to pet and feed little orphaned peanuts. It was amazing. I got some great pictures – I’ll post them on Snapfish next week.
Ingredients (in no particular order): sweet potato, chickpeas, tomato, peanuts, cumin, salt, pepper, onion, canola oil, homemade vegetable stock goodness

Thick and hearty, this soup is a dream for chickpea fans. I’m a sweet potato/yam fan, so I was glad to see nice soft chunks in my stew. My only complaint is that the peanut flavor is a little strong, but maybe it’s supposed to be. It’s good for a really, really cold night.

Oh. My. Gods. Soupergirl continuously makes me speechless with her soups. (Mostly because I’m too busy shoveling them into my mouth, with ocassional pauses to gasp for breath.)
The flavours are so mellow–I assumed the soup would be oddly sweet, what with the sweet potatoes! But the chickpeas, tomatoes, and peanuts combine with the sweet potatoes to make a sensationally masticateriffic experience for your mouth! I think the peanuts are the glue that hold all these ingredients together and make them blend so nicely.

This is the best of your meal-type soups I’ve had. It had the thick puree quality that I like in your appetizer soups but also thick chunks of healthy stuff — and I loved the peanut flavor.
This stew/soup deserves more than a 5 spoon rating….this is a 10 spoon rating! Thick, chunky and very filling. The flavors are wonderful. Wow, wow, wow — Soupergirl just blew my knee highs off. :-)

This is on my tops list as well…I loved the peanutty flavor and it was very filling, but I still finished the whole bowl without any hesitation!!! I talked about it all day to my husband who got a little jealous…lol!!!

Wow. I don’t think any other words will work. After reading all the reviews about this soup I decided to order a quart AND a pint. I should have ordered more. This is one of those foods that I could eat every day and be perfectly happy. I was going to bring the quart home to share with my husband for dinner, but it’s so good I’m not sure I want to… Thanks Soupergirl for more amazing yumminess!

I just finished my first bowl of Soupergirl soup – the West African Safari Stew – and I’ve got to say YUM! I ate half a quart container for lunch and if I weren’t so full, I’d be going back for the rest. Perfect for a dreary day.
Yummmmmm! This was a delicious peanutty light yet filling perfect soup – please don’t wait too long before bringing it back again! It is one of my all time favorites.

Definitely a winner – unique and fabulous flavor combination. Only suggestion would be to make the sweet potato chunks a leeetle smaller – they were larger than bite-size in my batch.
This is by far the best soup I have had in my entire life. I only wish I had ordered more and frozen it!! This is one reason to look forward to winter again…
