I’m about to say something very controversial, and I ask you not to judge me. I…. don’t…. love… gazpacho!! Aaaahhh!!! I’m sorry!! But, you can’t really own a soup company and not make gazpacho. And so many folks have been asking for it – so we had to come up with something. So Soupermom and I headed down to the market to brainstorm. As I was munching on my tenth free sample of tomato, I popped a slice of peach in my mouth. I poured in a little olive oil, white-wine vinegar, agave nectar, some salt, a wee bit of pepper, and some fresh tarragon, for giggles. Yes, people stared. And yes, I have a huge mouth. It is enormous, really. I began to chew and chew, as Soupermom was yelling at me that if I kept doing stuff like that, I was going to choke, and also we would get permanently banned from the market. When I finally swallowed I said – by golly, that’s it!! This is our gazpacho!! Peach and tomatoes! With some tang and some sweetness! Oh my, oh my! Soupermom couldn’t help herself. She began stuffing everything in her mouth too. But her mouth isn’t as big, so she spilled all over her shirt, and then, well, we did get kicked out. But with an awesome gazpacho recipe, so who cares!!
Ingredients (in no particular order): tomatoes, peaches, light agave nectar, shallots, olive oil, white wine vinegar, tarragon, salt, pepper

On a hot summer day, a cool meal is ideal. And a nice cool gazpacho like this hits the spot. The chunks of tomato and peach counterbalanced each other perfectly. If I order it again, I may add a splash of lime to it, but today I had it with Lime tortilla chips from Food Should Taste Good.

A wonderful way to enjoy lots of extra tomatoes and peaches when they’re in season!
Normally, I love all things created by the talented Soupergirl and Soupermom, and am fascinated to see the latest creative experiments — but this did not work for me. Tasted rather like perfumed lotion. Could not eat it. Glad to see other posters enjoyed it, though.
Like Jill above, I wasn’t a fan of this soup. The tomato/peach combo straddled the sweet/savory line in a manner I found unpleasant rather than delicious or interesting. Either a straight-up gazpacho or a more peach-centric soup would be preferable. To wit, I had a delicious chilled pureed cucumber-peach soup in SC last week – refreshing, but with a hint of sweetness! Yummy. Peraps you’d consider something more along those lines in future?
