The Potato, Carrot, Leek Trio Soup

All we are saying is give peace, and soup, a chance.

As a student of history, I’m fascinated by the folk groups of the 50′s and 60′s who helped foster the protest and anti-war movements. Peter, Paul, and Mary, the Weavers, and of course, the Potato, Carrot, Leek Trio. You know the story – they started off as just potato and leek. But once they tasted the sweetness of the carrot, there was no way they were going to puree without her. In fact, their greatest hits came after carrot joined. I really think the impact of the song “We Shall be Pureed” is still relevant today. Of course, as can be expected, everyone suspected them of adding cream to their ingredients. True fans know this was not the case. They were just naturally creamy. I think my favorite song of theirs was “If I Had an Immersion Blender.” But who can forget their timeless classic, “Salt! What is it Good For!” So powerful!

Ingredients (in no particular order): carrots, potatoes, leeks, parsley, homemade vegetable stock goodness, salt, pepper, canola oil

Soup type: Pureed

    Loved this soup. It was not spicy and just had a nice mellow flavor. My husband loved it which is like a miracle. Would certainly order again.
