You Make My Soup Come True, Private Soup, and my favorite, Soupeater. I know they’ve been gone for a while. But now they are back! Peanut trimmed his ‘stache and Butternut Squash has a trendy buzz cut. Together with their back up band – Brown Basmati Ricerettis – they are touring the nation! Their new songs are simply fabulous – The Depth of My Love is Like the Depth of Flavor of This Soup (that’s a working title…), Wow, This is Good Soup You Should Order It, and my new favorite, Who Knew Soup Could Taste So Good?! Absolutely awesome soup!! Perfect for combatting my first cold of the season. Just enough liquid to soothe the cold symptoms, but enough hearty vegetables and rice to make a meal of it. I did not feel any desire to add salt, which is an additional bonus this week where I am eating tons and tons of soup.
This is a beautifully balanced soup — both as to flavor and texture. At first I thought I might want to add a couple shakes of salt, but as I ate more, the flavors took over and were just perfect with no need to add anything. I especially liked the crunchy freshness of the parsley… usually a mindless addition, but here, clearly part of the plan! I might even like a slightly heavier emphasis on the peanut butter flavor, but it really was just delicious as is.
That soup was soooo good! A little salty, a little sweet, beautifully savory.
