Next week, see Lady Corny Corn in her best form – soup. She’s reunited with the baby butter beans to bring you this glorious end-of-summer creation. Slowly, she cooks together with the beans, carrots, basil, dill, and oregano to create a luscious, subtly sweet, delicate dish. It’s the perfect time for this soup. The days are getting shorter and there’s a chill in the evening air. Plus, she knows that Redskins fans can either celebrate or sob over a bowl of this comforting concoction. Ingredients (in no particular order): corn, baby butter beans, carrots, cabbage, celery, basil, dill, oregano, miso, garlic, onion, canola oil, salt, pepper, homemade vegetable stock goodness

This soup is fantastic! You can really taste the difference that fresh corn makes. My husband says it reminds him of his mom’s “porotos con mazamorra.”
This soup was like eating a little bowl of heaven. Ridiculously delicious.
Only problem was that it left me feeling badly that it was the end of corn season….sweet and delicious, and very filling.

I really enjoyed this soup and found it hearty and filling. I just stumbled upon this store one evening after working hard all day and in search of a healthy evening meal. I will now be a regular customer as this soup and the red lentil rice salad were wonderful! What’s next on the menu??!!
Ah sweet, sweet summer corn and white beans. I loved the season flavors and peppery taste of this soup. Savory sweetness, healthy and very satisying all at once.
