Summer Lovin’ Pureed Tortilla Soup

True love… with a bowl of soup.

I need to tell you guys about the most amazing pureed tortilla soup I met this summer. My life has been like out of a movie since we got together. Oh. My. Gosh. First of all, the corn. He has corn that slowly simmers which makes him so sweet. He’s a little bit hot and smoky from his chili peppers – but not too much! He knows when enough is enough. His spices? Coriander, cumin and oregano – perfect! But the best part? His whole wheat tortillas. He totally understands my attraction to whole grain and fiber. Isn’t he perfect? And he’s pureed!! We’ve gone to Screen on the Green together on the Mall and listened to live music at Fort Reno. Is it love? Or just a summer fling. Oh I hope it’s more than a fling, you guys. The one problem? He’s a soup.

Ingredients (in no particular order): corn, whole wheat tortillas, tomatoes, cumin, oregano, coriander, smoky chipotle peppers, tomato paste, canola oil, garlic, onion, salt, homemade vegetable stock goodness

    On our way home from an early movie tonight, we were trying to come up with something simple to put together for dinner. Forgot that when we’d arrive home, we’d find dinner waiting on our doorstep, including a quart of Summer Lovin’ pureed Tortilla Soup. I’m not usually a huge fan of pureed soups (always looking for something to bite into!) but this one blew me away! A wonderful smoothe blend of flavors, spiced just right!

    This soup was fantastic. I was worried that my husband would think it was too spicy because he’s very “sensitive” about spice. But it was perfect – thick and hearty but creamy and delicious. We can’t wait for the next round of Tortilla soup.

    really loved this one — hearty and though pureed, lots of distinct flavors to enjoy. Topped ti with fresh corn, tomoato and avaocado — even better, but absolutely fabulous all alone, too!

    I’m not always eager to eat a pureed soup. Even in the summer I love a chunky hearty soup, but this soup was very tasty and had a little kick to it! I only wish I had tried what Johanna did and added avocado!
