Ahhh, summer. My favorite time of year. I love ending each day with a glass of wine in one hand and a cup of creamy cauliflower soup in the other. Nothing says summer to me like a puree of cruciferous vegetables. I’m not sure if it’s the phyto-chemicals, the lowered cancer risk associated with eating several servings of this type of vegetable, or the creamy texture of the soup, but I just can’t get enough! Is it the subtle touch of cinnamon? The creaminess of the cauliflower pureed together with a drizzle of coconut milk? The fact that I can eat it warm or chilled? Who knows, and who cares! It makes me happy! It might be the antioxidants speaking, but I actually feel younger after eating this soup. My slowly graying hair turns brown again, I have a lift in my step, and I find myself drawn to wear my culottes that have been in my closet since 1987. OK, clearly I need to clean out my closet.
