Soul Warming Barley Sweet Potato Soup

Hearty enough to warm the belly AND the soul!

Soupermom loves telling this embarrassing story from my childhood. When I was four, I woke up one morning and announced that I was so cold that my soul was freezing. Soupermom, of course, decided to heat me up with a bowl of barley-sweet potato soup. I was so overwhelmed by the heartiness of the barley, the natural sweetness of the sweet potatoes, the perfect blending of cinnamon and sweet paprika, and the bright green spinach that I announced that I was starting a barley-sweet potato soup religion called Fiberism. According to little me, all “fibers” had to practice morning sweet potato salutations, bathe themselves in barley every Thursday, and chant the words “barley and sweet potatoes – they’re grrrrreeeat!” While Soupermom was pleased that I enjoyed the soup, she was a little concerned about my worshiping it. Souperdad, the lawyer, immediately pointed out the copyright issues with “they’re grrrreeatt” and demanded that I cease practicing Fiberism. I threw a tantrum and could only be drawn out of my room with a bowl of soup. And so ended my foray into founding a new religion. Personally I wonder why no one was concerned about the weekly barley bath…??!!

Ingredients (in no particular order): barley, sweet potatoes, spinach, cinnamon, sweet paprika, chili powder, coriander, cayenne pepper, mint, tomato paste, lemon juice, garlic, onion, olive oil, salt, pepper, homemade vegetable stock goodness

Soup type: Chunky
