Soul Refreshing Cucumber Gazpacho

So refreshing! Even your hair will cool down!

It’s hot. Really, really hot. The kind of hot that makes you act crazy. Everything in the Soupergirl shop started breaking down – the equipment, the delivery truck, and then, of course, my soul overheated. Soupermom noticed it first – steam was coming out of the tips of my hair. We immediately started googling the problem – but nothing was working! Cold water, bread… nothing! Then we found some obscure site that recommended peach cucumber gazpacho. Something about the crisp local peaches and cucumbers and hint of jalapeno brings the soul back to a comfortable temperature. It is important to serve the gazpacho quite cold to bring out the full refreshing flavors. Soupermom started spoon feeding me and eventually I just grabbed the pot from her hands and started guzzling. I started giggling as I bit into the little pieces of cucumber that floated to the top. I think I went a bit overboard as I jumped up, grabbed a microphone and started singing Aretha Franklin songs. My soul got a little out of control. Note to self – exercise self control with cucumber gazpacho. Second note to self – why do you have a microphone in a soup shop? Third note to self – overheated soul causes split ends – buy more conditioner.

Ingredients (in no particular order): cucumber, peach, red onion, onion, garlic, red wine vinegar, lemon juice, olive oil, jalapeno pepper, salt, pepper

Soup type: Cold, Pureed

    During the awful power outage, I tried out Soupergirl for the first time. Now I’m kicking myself for not getting in there sooner! I needed something cool, and the cucumber gazpacho intrigued me. I love standard gazpacho with fresh vegetables, but this version with cucumber really hit the spot. Now for the really good news; as soon as I sat down with this cool soup, my power was restored. Thanks Soupergirl! I’ll be back in soon!

    I was skeptical about this as I have never really enjoyed cold soups, but WOW! This was very tasty. Refreshing, perfect for the dog days of summer. Thanks, Soupergirl, for expanding my soup horizon.

    This was wonderful! An absolute standout. I think it was the seasoning — onion, garlic, vinegar and jalapeno — that did it. Please bring it back soon!

    Really, really good! You should consider rotating soups two weeks in a row. Two chunky and two pureed. Then week two you can drown in the soups you really love. I would eat this one every day for lunch for a week.

    DELICIOUS!!!! I’ve had a lot of gazpacho, and made my share of gazpacho, but this is by far the BEST! Please make frequently!! I should have ordered more, and certainly will next time!
