Snowmaggedon Spicy Carrot Peanut Soup

8 inches, 12 inches, 36 inches… this soup is good in any absurd amount of snow!

Loyal Soup Eaters of Washington, I dedicate this soup to you. As we take the fresh, sweet, local carrots and puree them with our homemade peanut butter, we think of you, fellow Snowmaggedon survivors. As we puree it up with a pinch of chili and freshly squeezed lime juice, we have you, fellow Washingtonians, in our minds. But most of all, we dedicate this peanut-buttery, sweet, slightly spicy, creamy, and deliciously smooth soup to you, Bob Ryan, Doug Hill, Sue Palka, and the other brave meteorologists. No matter what time we turned on our TV’s – 3:00 AM, 7:30 PM, noon – there you were. In front of your Doppler-5000 Weathertron-Atari-Nintendo-Radar-Systematic-Thingies – telling us how much snow was coming. Keeping us calm, yet prepared. Fearful, yet knowledgeable of the amount of milk, eggs, and bread we should buy. We don’t know when you bathe, sleep, or eat, and frankly, we don’t care. Just keep those forecasts coming. This soup’s for you.

Ingredients (in no particular order): carrots, homemade peanut butter, chili, garlic, celery, lime juice, soy sauce, onion, salt, canola oil.

    Simply delicious. The flavors we so subtle and perfectly blended. The carrot did not overwhelm the peanut and vice versa. Just perfect and delicious!

    Good but not one of my Soupergirl favorites. The flavors were a little too subtle for my taste, but the soup texture itself was smooth and creamy.
