I recently got lost (again) in Soupalot and stumbled upon the home of the knight, Sir Lentil. He was very warm and welcoming, and insisted I spend the evening with his family, which is huge. And he introduced them all…one by one. And these are the names (I kid you not): Tomato, Eggplant, Cinnamon, Paprika, Mint, Pepper, and the youngest, Chopped Apricot (he wasn’t really planned…). I stood there, stunned. “Sir Lentil, ” I said. “Your sons are the perfect ingredient list for a soup! Did you know that?” He replied, “SOUP!? THESE ARE MY SONS! EACH ONE WAS NAMED AFTER AN ANCESTOR. GET OUT OF MY HOUSE” “Wait!” I replied. “Let me at least make you this soup. I mean…umm… your name is Sir Lentil. I can’t be the first one to have mentioned this to you…” He shrugged and showed me the way to the kitchen. And as expected, he loved it. “YOU MUST MAKE THIS SOUP FOR YOUR CUSTOMERS. AND YOU MUST NAME IT AFTER ME.” I told him I would, as long as he lowered his voice. So here you go folks, Sir Lentil’s Lentil Soup.
Ingredients (in no particular order): lentils, apricot, tomato, eggplant, cinnamon, paprika, pepper, cayenne pepper, mint, parsley, onion, salt, canola oil, homemade vegetable stock goodness
Soup type: Chunky








I have hesitated for weeks to order anything off of this site, partially out of laziness, but mostly due to the delay and resulting fear of not knowing what i’ll be feeling like a week from today. But I’m also not one to turn down lentils, and this whacky mix seemed too interesting to turn down.
So glad i didn’t.
This is one of the best tasting soups i have ever, ever had. Everything in the soup is cooked to a perfect consistency, and the flavors are simply phenomenal. Please please please continue experimenting with lentils, eggplant, apricots and paprika!! Or maybe make the recipe available… PLEASE?!!
The only tiny qualm I have is in the canola oil…could coconut or olive oil be substituted for a healthier rendition of this otherwise-perfect concoction?

Loved it! Plus, I especially love baby lentils more than regular now. I’ve had your lentil soup before, so no surprise how good it is even if you tweak it each time. Delectable!
One bite better than the next…great flavors, lentils were perfectly cooked, totally yummy.
