I love watermelon so much I don’t know what to do with myself. After some soul searching, I decided to write a song. Any similarities to Kermit the Frog’s Rainbow Connection are entirely coincidental.
Why aren’t there more songs, all about watermelons.
Don’t you see what’s insiiiiiiiiide
Redness and sweetness, and juicy deliciousness
And watermelons have nothing to hiiiiiide
When combined with dill, tomatoes, and cucumbers
It makes a fabulous summer soup.
Someday you’ll join me, the watermelon worshipers
The children, the puppies, and meeee
All of us under its spell
you know that it’s probably seeeeeeedless
Also, when you eat a whole watermelon, you can use the remaining shell as a bowl, a boat, or a hat. Just a friendly tip from Soupergirl!
Ingredients (in no particular order): watermelon, tomato, cucumber, jalapeno pepper, dill, red wine vinegar, olive oil, red onion, salt, pepper
Soup type: Cold, Pureed

I gave this soup 4 out of 5 spoons!! I have to say I really enjoyed it!! The flavor was very bright and very refreshing – loved the chunks of sweet watermelon too. I think the soup could have handled a bit more “voom” though – maybe a bit more jalapeno and a bit more red wine vinegar. Anyway, I am not a “souper” anything so who knows if my suggested changes would amount to much! This soup lasted in my household all about 10 minutes. So that is a good sign!
I finished the whole one quart in less than 30 minutes. You must do this soup again before summer is over….please…please….please.
I decided to add another comment because as I was eating the honeydew soup I was missing this soup. So please bring it back sometime!!!
I was not sure about watermelon gazpacho but now that I have tasted it I am a convert!
I love this soup! I give it six spoons. It is very refreshing, with big chunks of watermelon, and well seasoned. Soupergirl should clearly make this soup again soon!
I am so sorry I didn’t order this soup! (I got to try my colleague’s.) Surprisingly, it is absolutely as delicious warm as cold! Please, give me another chance this summer to order it!!!

I am sitting here having just finished a bowlful and wondering, can I get away with eating the rest of the quart? I’ll refrain, because I think my husband will notice (I should never have mentioned we were having a soup delivery today!). plus I want to save some for him to try. very very yummy.
Just as awesome as I recall, but now I have my own quart! The little ting of acid from the red wine vinegar is PERFECT with the sweet watermelon. I adore this soup.
I am so bummed that I only got a pint of this soup! It’s surprisingly fantastic! (I was just a tad skeptical about the watermelon-tomato combo – how foolish of me!!). Thanks for opening up my mind and taste buds!
