This soup is lovely – simply lovely. No fancy spices or herbs. Just the fabulous taste of local, organic sweet potatoes. I love this soup so much I wrote a poem:
Simple Sally loves her sweet potato soup
She eats it by the seashore
She also collects seashells
Simple Sally thinks this soup is perfect
She likes to eat it in the evening when it is cold
She also likes to eat it when her office’s thermostat is turned too low
Simple Sally hates when they do that
Simple Sally loves the simplicity of this soup
She feels better about the fact that her first name is “Simple”
And her last name is “Sally”
I did not do well in freshman year poetry class. OK I failed. Whatever.
Ingredients (in no particular order): sweet potatoes, carrots, garlic, leeks, russet potatoes, dry white wine, salt, pepper, bay leaf, onion, canola oil
