There are few things more important to me in life than soup and my niece. I found this soup so delightful, it inspired me to write a song for my niece. I figured I’d toss in life lessons for her, as I am her wise and all knowing Souperaunt. It is sung to the tune of “My Favorite Things” from the Sound of Music. Sing along!
Parsnips, sweet potatoes, carrots and agave
Cinnamon and coriander and nutmeg and citrus
Blended together, so warm and inviting

Ingredients (in no particular order): sweet potatoes, carrots, parsnips, celery root, agave, cinnamon, nutmeg, coriander, orange juice, lime juice, cayenne, orange zest, salt, olive oil, homemade vegetable stock goodness

I was not sure if I would like this as I am not a big fan of root vegitables so I only ordered a pint. Now I wish I had more as I was pleasently surprised. It had a nice, slight sweetness with a little zest probably from the orange or lime. It was also a big hit with my children. Lesson learned: when in doubt order more, if you like it, you will be glad and if you don’t, you will likely find someone who does.
