Soft, wholesome quinoa combines perfectly with sweet local roasted squash and tart cranberries!

Ingredients (in no particular order): quinoa, roasted butternut squash, dried cranberries, sunflower seeds, paprika, agave, lemon juice, red wine vinegar, extra virgin olive oil, salt, pepper

    I ususally love everything Soupergirl does, so it pains me to give a bad review. This salad has potential and maybe whoever was making my batch slipped and poured double, maybe triple the alloted sauce. Overall, way too much sauce, the quinoa is mushy and all I can taste is vinegar. Sorry Soupergirl, please revise this recipe!

    I agree with Beth. Way too much sauce or oil! Quinoa should be light and fluffy and this was watered down. Too bad — sounded great.

    Gosh— I’m so surprised at the other reviews! Mine was delicious. I think it’s my favorite salad so far. I just finished it off for breakfast.

    I really liked it too, but the quinoa is mushy in mine. That being said, I still liked the flavor, especially the tanginess of the fruit.

    I’m glad I took the time to read these reviews ’cause I thought it was me and my taste buds. Actually, I loved the flavor, and like Lisa often had part of my quart for breakfast, but there was something off in the salad which made it too rich and not gobble-up worthy or even gobble-up possible. The quinoa was super mushy; the salad too oily and tart. And I love olive oil and tart anything! But this was off. I usually inhale my Soupergirl salad quarts in a few days, but I only made a dent in this salad, though it did taste yummy. But it was hard to get down.

    Loved the flavors enough to overlook the mushy/overdressed aspect. Put it on top of plain greens and balanced very nicely. Look forward to having it again!

    This was my first salad order and i LOVED it. Can’t wait to see it again and will certainly be watching for it. The flavors were amazing and Cranberries and Butternut squash were amazing in it. I loved the lemon juice addition!

    I loved this salad. It was a touch mushy, but I enjoyed the flavor. I added some pistachios on top to lend some salt and crunch and it was dee-lis.

    Liked this a lot. A bit too much oil but I thought the quinoa was great and actually perfectly cooked and NOT mushy and actually somewhat crunchy which is the way I like it. But I do think it was missing a little something maybe a touch of scallions or fresh herb.

    A little too wet as stated by the previous reviews. But it is still delicious. Great combination of flavors.

    I’m not familiar with how quinoa ought to taste, so the above reviewers may be correct. Overall, I liked the texture and didn’t find the dressing too vinegary. In fact I found whatever vinegar there was not nearly assertive enough (maybe this was a correction from the earlier batches). Additional salt could have helped brighten the flavor as well. Finally the cranberries were welcome treats but applied too sparingly.

    My real issue is that the recipe advertised sunflower seeds, but instead had a healthy portion of what I’m pretty sure were almonds, to which I’m allergic. Fortunately not extremely so, such that I made several bites in before I registered what I was eating and had to discard the remainder.

    I loved this salad!! Quinoa is really hard to get right but this quinoa was chewy and nutty and perfect!! I also loved the little bits of sweetness from the cranberries and roasted butternut squash. Bravo!

    I enjoyed this salad immensely. Mine was not overdressed at all, nor was it mushy. I found it delicious.

    I like the combination but I would prefer the quinoa more cooked.
    same with the chickpea combination. I thought the chickpeas were not cooked enough as well as the quinoa. It made the salad only a 1 rating for me!
