The Persians know their rice salads!
An exotic combination of brown rice, roasted cashews, dates, and cinnamon.
Ingredients (in no particular order): brown rice, roasted cashews, dates, scallions, lemon juice, cilantro, cinnamon, salt, pepper, olive oil

This is my favorite salad so far. Please do make it again! And if you do, I have a suggestion – add just a little more lemon juice or something acidic for tang. (Mmmm…preserved lemons? Yum!) I am not really tasting the lemon and it would counter the sweetness of the date so perfectly. The cinnamon is delightful.
