Oliver’s Roasted Pumpkin and Black Bean Soup

Oliver knows this soup is worth a second helping!

My book club is tackling the classics this year. The first book we read was Charles Dicken’s Oliver. Remember the part when Oliver asked, “Please sir, I want some more”? My book club spent a lot of time analyzing that scene. What drove Oliver to risk so much for more? We decided it was probably because roasted pumpkin and black bean soup was on the lunch menu that day. Oliver was clearly overwhelmed by the hearty and meaty black beans. He was unable to resist the sweet flavors of the roasted pumpkin that had been pureed into a thick, creamy broth. The light touch of coconut milk added at the end probably made him lose his senses. So he got up from his table and asked for more. The book club members furthered our discussion by asking – had Oliver known that his request would cause such an uproar, eventually leading to his banishment from the workhouse, would he still have asked for more? Obviously, yes. Oh, and before you ask, unfortunately there is no more room in our book club. And yes, the book club members are Soupermom and me.

Ingredients (in no particular order): black beans, roasted pumpkin and squash, coconut milk, cumin, cilantro, lime zest and juice, salt, pepper, homemade vegetable stock goodness

Soup type: Chunky

    I’m sorry, but this has been my least favorite so far from you guys. I couldn’t find any hint of pumpkin, I don’t know if the pieces were very small or pureed into the liquid portion. So for me, it seemed like just plain black bean soup, and was pretty bland and boring. Sorry to say, I love your soups otherwise!

    I disagree with an earlier comment that the soup was boring. I tasted a subtle sweetness from the pumpkin that complemented the black beans without overwhelming them. I also enjoyed the slight zing from the lime juice and zest…..again subtle but gave depth to the flavor. Loved this soup! I hope to taste it again, Soupergirl!

    I think it is made with good ingredients but the pumpkin seems to mask some of the flavors. Traditional Cuban Black Bean soup is simpler and much better.
