Not Your Mama’s Carrot Coriander Soup

A carrot soup that makes all mamas proud!

How embarrassing was it when you were a teenager and your mom would insist on sending you everywhere with carrot soup! How many times did you hear “It’s cold outside, take your carrot soup!” Or how about, “You are not walking out of the house looking like that! Go get your carrot soup!” My favorite was, “Why can’t you date someone nice who likes carrot soup?” But we know that mom just wanted us to eat carrot soup because she loved us. And because carrots are naturally sweet, full of vitamin-C, and just plain awesome. So we decided to make mom’s classic carrot soup and spice it up a bit. We added a bit of coriander and cumin, a touch of paprika, and a pinch of cayenne. We also pureed in a bit of rice to make it creamy and rich. The result – a carrot soup that makes everyone cool! Well, actually warm, but let’s not mince words. Or soup.

Ingredients (in no particular order): carrots, coriander, cumin, paprika, bay leaves, cayenne, rice, onion, olive, salt, pepper, homemade vegetable stock goodness

Soup type: Pureed
