Soups for the Week of June 24 (Order window is now open):
Chunky Soup: Just a Spoonful of Summer Minestrone
Ingredients (in no particular order): zucchini, kale, basil, green beans, tomato paste, white beans, rice, thyme, sage, parsley, celery, carrot, onion, olive oil, salt, pepper, homemade vegetable stock
True story – the original lyrics to that famous Mary Poppins song actually went: “Just a spoonful of seasonal and local Soupergirl summer minestrone makes the medicine go down!” The writers were so excited! Not only were they going to teach children to eat their medicine, they were going to encourage them to eat seasonal and local produce! Oh, imagine the possibilities. Children would see the movie and beg their parents to take them to the farmers market, demanding to see fresh basil, zucchini, greens, beans, and so much more! They would marvel at the soup’s delicious and fresh flavor! In the most delightful way, indeed!! But then the director stepped in and pointed out that it was 1964, and Soupergirl didn’t exist. Neither did farmers markets for that matter. So maybe they should just use the word “sugar” instead. Kind of lame, if you ask me. One of the writers, Zelda Souperosky (my dear great aunt), quit in protest. I dedicate this soup to her.
Allergy Note: Contains no nut or gluten ingredients.
Pureed Soup: Basil Spiked Zucchini Tomato (serve warm or chilled)
Ingredients (in no particular order): zucchini, tomatoes, basil, canola oil, onion, salt, pepper, homemade vegetable stock
Ladies beware. Someone at local soup shops is spiking women’s soup with basil! When I say beware, I mean… thank goodness!! Last week, I was at a local soup bar, quietly eating my zucchini tomato soup, which was lovely. I put down my soup for a minute to tie my shoe. I heard a strange whirring sound at the bar, but figured it was someone’s cell phone. I got up, took another spoonful, and thought, “why is my soup suddenly more delicious than before?” Then I saw out of the corner of my eye, a sneaky little man spiking another woman’s soup! He dropped in the basil, whipped out his mini-immersion blender, pureed the soup, and sneaked away. I ran over to her just as she was about to take another spoonful. “Stop!! Beware!!” I said. “Your soup tastes even MORE like summer in a bowl! Basil! Basil!!” She replied, “Oh thank goodness you told me! And thank goodness for basil!” Amen to that!!
Allergy Note: Contains no nut or gluten ingredients.
