Soups for the Week of April 21st (Order window is now open):

Chunky Soup: Skipping Rope with Quinoa Vegetable and Greens

Ingredients (in no particular order): quinoa, carrot, spinach, paprika, ginger, cumin, fennel, fennel seed, coriander, garlic, salt, pepper, onion, canola oil, homemade vegetable stock

This soup brings back so many spring-time memories for me. Every year, when spring would arrive, Soupermom and I had a tradition of going outside and jumping rope together. The only problem was that I was a really uncoordinated kid and would always fall on my face. Mom would then pour me a bowl of this soup, and we’d sing the quinoa soup song. She’d begin with:  Quinoa, quinoa, full of fiber and protein / Quinoa, quinoa – looks a little funny when cooked, but is really, really yummy. And then I’d sing: Spinach and carrots are really nice too / and ginger, fennel, cumin, coriander, and paprika add a deeply layered flavor. Then we’d both jump and hold hands and sing together: Spring is here! Let’s eat quinoa soup! It smells so good, and it tastes even better! And also it is gluten free and low on the glycemic index! I’d usually get so excited that I’d run right back to the jump rope and my mother would sigh, get another bowl, and start the process again…

Allergy Note: Contains no nut, gluten or soy ingredients.

Pureed Soup: The Adventures of Carrot Vichyssoise

tomsawyer Ingredients (in no particular order): carrot, potato, leek, shallots, organic coconut milk, celery, canola oil, homemade vegetable stock, salt, white pepper

When I eat this soup, I’m taken back to my lazy spring days when I was young. I had the typical childhood – probably just like yours. My mom would wake me up early, and pack me a thermos full of carrot coconut vichyssoise. She knew how to make it just right – not too potatoey, not to coconuty – just the perfect amount of natural carrot sweetness and “creamy” deliciousness. She’d chill it all night so it would stay nice and cold in my thermos. I’d then pack my bag and head down to the river where me and my friend Huck would get into all sorts of trouble. One time some no good fellers hitched a ride on our raft and tried to steal my soup! They used the old “lactose intolerance” line, claiming they couldn’t find any quality soup anywhere on the river. Well shucks, nothing was gonna come between me and my favorite vichyssoise. Another time some rascals tried to trade for my soup – they said they had a can of tomato-rice that they could barter. A can?? Those kidders. See, word of my mama’s soup had spread all up and down the river and people would do anything to get a taste. But nothing was gonna come between me and my vichy. Nuthin! You’ll see!  (PS you can actually eat this soup warm or chilled!)

Allergy Note: Contains no nut, soy, or gluten ingredients.
