Soups for the Week of May 21 (Order window is now open):
Chunky Soup: Delightful, Delicious, De-Lovely Barley, Tomato, Spinach Soup
Ingredients (in no particular order): barley, sun dried tomatoes, spinach, tomatoes, dill, garlic, cayenne, bay leaves, salt, pepper, onion, canola oil, homemade vegetable stock
I absolutely love this time of year. I tuck my heavy winter chilis and stews into the back of the closet and pull out my light and springy soups. This soup epitomizes that transition for me. Rather than being a traditional heavy barley stew, it’s light! To quote Cole Porter – it’s delightful, it’s delicious, it’s de-lovely. Fresh, green spinach floats alongside sun-dried tomatoes in a rosemary infused broth. The barley is filling yet delicate. The soup goes perfectly with a light cotton cardigan, a pair of sandals, and capris. Eat it with your favorite tee shirt and spring skirt, and you’ll be ready for brunch or a night out on the town. Go crazy! Put on your favorite fun hat and eat it with a fork!! Oh, how I love spring soups. And fashion. And fashionable spring soups. De-lovely indeed!
Allergy Note: Nut free. Contains gluten.
Pureed Soup: Three Cheers for Chickpea Soup
Ingredients (in no particular order): chickpeas, cumin, coriander, cinnamon, ginger, garlic, parsley, onion, olive oil, salt, pepper, homemade vegetable stock
I recently visited my high school for a Spring season pep rally. I just loved the cheer they came up with! It really inspired me! It goes like this:
We love chickpeas yes we do,
We love chickpeas how ’bout you?
We love ginger and cinnamon, yes we do,
We love cumin and coriander, how ’bout you?
We love non-dairy creamy soups, yes we do,
We love hearty, yet smooth soup, how ’bout you?
We think freshly squeezed lemon juice always adds such a nice touch, yes we do,
We love soup, how ’bout you?
Gooooooo team!!!
The baseball team then went on to win five straight games, so clearly they are on to something with this cheer. And this soup.
Allergy Note: Nut and gluten free.
Salads
Can be eaten with a fork OR a spoon, if you’d like!

Allergy Note: Nut and gluten free.
