Maple Syrup Roasted Butternut Squash Fabulousness

Oh, how fabulous!

squash_pilgrimSome folks I know call this soup amazing. I call it fabulous. You choose. Here’s the deal. First, we take a squash, then we dress it up like a pilgrim, and we take a picture of it. Then, we take some more squash, roast ‘em, mix in some sweetness and spiciness, and puree it till it’s smooth. A smooth operator.  When we serve this soup at the Souperfamily’s Thanksgiving dinner, we eat it and then get up and start a conga line around the dining room because we love it so much. Soupermom breaks out a bongo drum and bangs out a funky rhythm. See, and all this time you thought she just made soup. Oh, please, you should see her dance the rumba. Then the annual family fight starts. “YOU LIE! There is cream in this soup!!” shouts cousin Susan. “NEVER!!” I reply. “How many times do I have to tell you!! You don’t need cream to make a soup rich and, well, creamy!!” Then we eat our Tofurki and dance some more. I love Thanksgiving.

Ingredients (in no particular order): roasted butternut squash, maple syrup, curry, garlic, onion, homemade vegetable stock goodness, salt, pepper, canola oil

Soup type: Pureed

1 Spoon - Ehh...2 Spoons - Ok.3 Spoons - Pretty Good.4 Spoons - Great!5 Spoons - The Best!

    I was a little wary ordering this because I’m not a huge butternut squash person. Boy was I wrong! Never doubt Soupergirl. This ended up being my favorite soup thus far, and I was bummed to have ordered only a pint. Next time, I will definitely get two quarts!

    This is a seriously excellent soup! I had a bowl at the store today, and as a butternut squash fan – I have trouble using it in a recipe because once I’ve roasted it, I can’t resist eating it all plain – this soup takes this noble vegetable to new heights. Warm, filling, just the right balance of spices, a little touch of sweetness. Ummmm.

    I greatly enjoyed both of this week’s soups (the “Maple Syrup Roasted Butternut Squash Fabulousness Soup” and the “Old World Minestrone Soup”) when they were offered previously. However, this time I was surprised that I couldn’t finish either of the pints I received because I didn’t like the amount of pepper they seemed to contain… it made my tongue burn so much that I had trouble tasting the soups’ other flavors. This is the first time I’ve had that problem with any of the many other soups I’ve ordered; so, I don’t understand why I suddenly had that type of problem with this week’s two offerings.

    This was my first time having Souper Girl soup. I was very excited ordering this soup since I love, love, love butternut squash soup and the description sounded amazing! I have to say, however, that I couldn’t even finish this pint. All I tasted was pepper. No squash, no maple syrup, no fabulousness, just pepper burning my mouth. I was pretty disappointed and hope that maybe Souper Girl might adjust the recipe in the future.
