Poor Hugo the awkward parsnip! Puberty was so rough on him. All the other popular root vegetables would always pick on him. He only had one friend in the world – Janey the tomato. And let’s face it – she was a little acidic! Hugo’s mother always said to him, “you just wait, Hugo. Soon you’ll have your day in the sun. Your sweet and earthy tones will shine and everyone will want to be your friend.” And sure enough, when Hugo turned 16 things started changing. He started lifting weights and growing his hair out. And then next thing you knew, all the vegetables wanted to go to the prom with Hugo. But who did he take? You guessed it! Janey the tomato.Their tangy and sweet pairing made them quite a unique couple! His mellow sweetness perfectly countered her slight acidity. Oh how smooth they looked as they waltzed across the floor. This was another soup that was like a party in my mouth and everyone was invited!!! My Wednesday delivery of Soupergirl always makes me happy to go to work extra early that morning and this soup gave me another good reason. As a vegan, a good creamy soup is hard to come by…My mouth and my tummy thanks Soupergirl :p
