Joshua was in search of a coolerclimate. He was sick of the one hundred degree days in Jamaica. Ironically, he knew that the key to getting to cooler places was soup! So he cooked and cooked and came up with this perfect summer soup recipe. He found the most fiery red, sweet peppers on the island. He added some juicy tomatoes, chickpeas, and his favorite spice – sweet curry. He topped it off with a splash of coconut milk. He let the soup simmer slowly for hours. When he finally tasted it, he began to dance around the house. He knew he had found his key to cooler climates with this beautiful soup. The aroma alone was enough to make people swoon. He packed his bags and took his recipe to Washington, DC. He was a huge success! All the critics loved him! But Joshua just wanted to be a tourist, see all the sites, enjoy cooler weather, and eat soup. He saw the monuments and the Smithsonian. He caught a Nats game. He wanted to see the famous Debt Ceiling, which he imagined would look just like the Sistine Chapel, but it was under construction. Then the temperature hit 102. He started to cry, but then remembered he had soup! And all was well again! The end.
Ingredients (in no particular order): red peppers, tomatoes, jalopeno chili, curry, chickpeas, coconut milk, brown rice, canola oil, garlic, onion, salt, pepper, homemade vegetable stock goodness

This soup was delicious! The curry and coconut milk were very nice additions to the usual vegetable stock goodness. I could taste the chili but the soup wasn’t spicy. My boyfriend enjoyed it straight from the container, I added a tiny bit of salt. Both of us were happy campers.
Really like the soups with brown rice – this was so hearty (and the coconut milk made a wonderful addition).
