Jack and the Black Bean and Roasted Pumpkin Stock Pot-Soup

Jack and those crazy black beans make one crazy good soup!

Last weekend, I told my little niece my favorite soup fairytale – Jack and the Black Bean and Roasted Pumpkin Stock. Jack lived with his mother and their only source of income was their stock pot. One day it broke so Jack’s mom sent him to the market to try and sell the pot. On the way Jack met a chef who gave him “magic beans” in exchange for the pot. When Jack returned home, his mother was so upset she threw the beans out the window. That night the beans grew into a massive soup kettle that magically cooked the most delicious and wholesome black bean and roasted pumpkin soup. The aroma of the roasted pumpkin puree and the spices spread all over town. An ogre walked by and sang “Fe-Fi-Fo-Feam, I smell the aroma of a delicious black bean. As well as cinnamon, ginger, and cumin. And also there is roasted pumpkin.” He knocked on the door of the house and asked Jack and his mother to supply him and his village with this soup for dinner every night. Cost was not an issue. The entire ogre village was trying to lower their cholesterol and lose weight by cutting back on eating bread made from the blood of an Englishman, and this soup would be the perfect first step for everyone. Then Jack and his mother sold their soup to Whole Foods and lived happily ever after. The end.

Ingredients (in no particular order): black beans roasted squash and pumpkin, cumin, cinnamon, ginger, red wine vinegar, tomato, garlic, olive oil, onion, homemade vegetable stock goodness, salt, pepper
