I met my boyfriend, Leonard, when I was in the 8th grade. Everything was great, but after a few months, I realized we were better off as friends. I didn’t know what to do because Leonard was such a swell guy. My friends told me to distract him with chili. Apparently breaking up over a bowl of chili was all the rage. So I cooked a batch of this hearty, filling, vegetable chili. I’m not sure if it was the slow cooked red beans, the smokiness, the sweet potatoes and parsnips, the touch of citrus, or the mambo I danced while cooking… but I ate the whole batch. I literally scraped cumin off the bottom of the pot. Well I couldn’t admit to anyone that I ate an entire pot of chili in one sitting. So…. Leonard and I will be celebrating our 25th anniversary next month.
Ingredients (in no particular order): red beans, sweet potato, Spanish smoked paprika, parsnip, cumin, coriander, chili powder, tomato, cilantro, orange juice, garlic, onion, canola oil, salt, pepper, homemade vegetable stock
