Harper Lee’s Quinoa Vegetable Soup

A soup that will cure your writer’s block AND hunger!

Last year marked the 50th anniversary of the publication Harper Lee’s classic, To Kill a Mockingbird. I decided to do some research into her writing of the book and found quite an interesting story. It turns out that half way through writing  the book, she had complete writer’s block. Her friend, Truman Capote, learned of her troubles and brought her some soup, as any good friend would. The soup had all the summer basics – garden fresh vegetables, beans, and tons of basil. But Truman added his secret “writer’s block breaking” weapon – quinoa! Harper took one bite and her eyes opened wide. She exclaimed, “what is the magical grain in this soup?!” “Aaah, yes, quinoa,” he replied. “Chock full of protein, vitamin B, iron, calcium, potassium, and more, Quinoa is sure to kick any writers block. Plus, its slightly sweet and nutty flavor is nothing short of awesome!” Harper returned to her computer and began typing away. She decided to name one of the primary characters “Quinoa” in honor of the soup. But, at the first reading with her publisher, he kept mispronouncing the name, so she decided on “Boo” instead. True story.

Ingredients (in no particular order): quinoa, green beans, zucchini, red bell peppers, basil, white beans, carrots, tomatoes, tomato paste, olive oil, garlic, onion, salt, pepper, homemade vegetable stock goodness

Soup type: Chunky

    This soup was fantastic! Something about the tomato paste and the delicious broth with the quinoa made it a delicious creamy consistency. This has been the best one yet! Souperb!

    Loved the chunky vegetables and I’m always trying to find more ways to use quinoa. Delicious! Could have used a pinch of salt, but Soupergirl is probably trying to help us reduce our sodium intake!

    Delicious! We ate it all up and could have eaten more! Maybe a touch salty for us, but you can’t please everyone in this regard.

    This was great! loved it! I especially appreciated the quinoa and white beans, which added some protein to the soup. I think it needed a little more flavor in the broth; I added some salt, which helped. A squirt of lemon probably also would have been good. Please bring this one back!

    I really liked this one. It was perfect to refuel after a run! I had to add a little water to make it more soup-like and less stew-like but I would prefer to receive more veggies and add my own liquid so it worked out perfectly.

    Delcious and truly nutritious (a meal in a bowl).
