Hail to the Roasted Tomato and Eggplant Soup

Maybe good soup means we’ll have a good season…!

redskins-logoI have been a Redskins fan since I was a wee lil’ Souperbaby. And let me tell you folks something – this is our season. Pay no attention to the fact that I’ve been saying that since 1995. THIS IS OUR SEASON. Tony Kornheiser, start revving up that bandwagon!! So, dear Redskins, I dedicate this soup to you. Please sing the following song to the tune of Hail to the Redskins:

Hail tomato and eggplant / Hail chickpeas too
Curry is a nice spice / Garlic adds flavor too!

Roasting produce makes it really flavorful
Though it makes the kitchen really hot

So when we score our first touchdown on Sunday against the Giants, I think all of us Loyal Soup Eaters should sing this song instead of the original. It’s quite inspirational, don’t you think?

Ingredients (in no particular order): tomato, carrot, eggplant, chickpeas, garlic, curry, olive oil, salt, pepper, homemade vegetable stock goodness

Soup type: Chunky

    I think Wednesday is becoming my favorite day of the week. The “soup gang” from work and I are filled with excitement knowing that Wednesday has finally arrived. We all look forward to popping the lids off of our soup containers and sampling the soups that have just been delivered. Usually, we cannot make up our minds as to which soup tastes better. For me, I just inhaled the Roasted Tomato and Eggplant Soup accompanied by the infamous pita chips and the delicious cornbread. In sum, I just enjoyed another fabulous Soupergirl soup creation. I am so looking forward to the String Bean soup tomorrow, providing, I have enough self-control to wait that long! Thanks again Soupergirl.

    I didn’t think I liked eggplant, but the texture and flavor of the eggplant in this soup has me eating eggplant again. Great soup!

    The only eggplant I could ever learn to love was the uber-fattening Eggplant Parmesan fr Vace….now I have another. This soup is tasty and the eggplant and chickpeas make it a meal. It’s not my v favorite SG soup of all time, but because it rehabilitated my relationship w/eggplant, I give it 5-stars!
