Ginger and asparagus! Oh my!

Late spring asparagus, ginger, mushrooms, and kidney beans mix together to make a lovely salad!

Ingredients (in no particular order): asparagus, kidney beans, rice, mushrooms, almonds, ginger, garlic, orange juice, canola oil, red wine vinegar, salt, pepper

    This salad is so yummy. It’s crunchy and creamy at the same time! Love the underlying taste of ginger and the pieces of asparagus. I do wonder about the nutritional info, but it’s one I would order again for sure!
