First Place Zucchini Lentil Soup

A gold ribbon soup!! First place! Top of the class!

As some of you know, I went to a soup-focused charter school growing up. Like most kids, we had our annual science fair, which was my favorite event of the year. One friend made a volcano out of mung beans – it exploded when they came to a simmer. Another friend made a black bean operated radio. I liked to bend the rules a little. I wanted to make a chunky style soup that had pureed components to it. I know – a little advanced for an 8 year old. So I cooked onion along with some of my favorite spices – dill, basil, sage, and thyme, and I added zucchini. Then, I pureed it all together!! My friend Wanda was like – you are going to get in sooooooo much trouble. But I was on a roll. Only then did I add the red lentils! The result? Awesomeness. Soup-science-fair awesomeness. When it came time to judging, my Homesoup teacher, Mrs. Stock, yelled “Violation! Violation! You used cream!!” I replied, “No! No, Mrs. Stock,  you are tasting the pureed veggie and herb mixture I used! Oh, please, Mrs. Stock!  You gotta believe me! You just gotta!” She looked at my ingredient list, retasted the soup, and walked away. Later on I found a first place sticker on on my soup pot. Proudest moment of my life.

Ingredients (in no particular order): red lentils, zucchini, dill, basil, sage, thyme, olive oil, garlic, onion, salt, pepper, homemade vegetable stock goodness

Soup type: Chunky

    I thought the First Pace Zucchini Lentil is a First Place soup! Great consistency. Great flavor. I loved it.

    I think this was your best soup ever. The flavor was so bold, I keep going back and reading the list of ingredients to see what I’m tasting. Please make this one again!

    Loved it, loved it, loved it. Lentils didn’t look red though. Not sure what made it so good, but I really enjoyed it.

    I was a little disappointed when I didn’t see any red lentils. But, I had just gotten my delivery and it was what I was having for dinner. So, despite the lack of visible red lentils, I heated up my soup and WOW. I forgot all about whether the lentils were red or not. This soup is seriously delicious. This is a great soup. I can’t wait to have more for dinner tonight.

    Thanks for this great soup and for not making eating healthy so bland.

    Once again, this is a most outstanding soup! So delicious! It is my most favorite soup, and not just of Soupegirl’s! I had a French Onion soup my neighbor’s son made the other night which had the best cheese melted on it and freshly baked bread in it and I thought WOW – that was so delicious; however, these lentils alone beat out the onions, perfect cheese for onion soup & the freshly baked bread he did for it. Thanks again.
