Fear Conquering Triple Ginger Butternut Squash Soup

You too can overcome your fear of ginger!

When I was a little girl, I had a horrible fear of ginger. Every night, before I went to sleep, I made my dad check under the bed and in the closet for stray ginger. The thought of even a bit of ginger powder spilled on the floor made me dive for the covers. Finally, one night, my mother had had enough. “What would so terrible if we did indeed find ginger under your bed??” I didn’t have an answer, but I refused to change my ways. Finally, she decided to make me a triple ginger butternut squash soup to help me face my phobia. I loved butternut squash and it was painful for me to see her mix it with frightening ginger. Don’t tell anyone, but I slept with a butternut squash every night until I was fifteen. Anyways, my mom put in every type of ginger imaginable – fresh, powdered, and even crystallized ginger!! And you know what? It was delicious. The ginger came alive in the soup. It tickled my tongue with every bite. And of course, the butternut squash was sweet and almost creamy. Of course, her scheme worked. After that I insisted on sleeping with butternut squash in my bed, and fresh ginger underneath.

Ingredients (in no particular order): butternut squash, crystallized ginger, ground ginger, fresh ginger, onion, olive oil, salt, pepper, homemade vegetable stock goodness

Soup type: Pureed

    We loved this soup SO much, my husband and I were eyeing each other’s bowls to see who had more left. I think he got a little more than I did in his bowl, and was jealous for much of the evening. It was amazing– a taste of heaven. We won’t be ordering any pints again….bring on a BIGGER size! It was just purely perfect as a winter soup: filling, flavorful, and the right combination of smooth and strong. Thank you for this hapiness.

    This soup is fantastic – I’m actually not a huge fan of ginger, but there’s just enough in this soup to give it the right amount of kick without being overpowering. Love it!

    I think they should re-name this “Soup-Crack” because I found myself unable to stop gluttoning down this delicious concoction of soup (and this is coming from a guy that’s not particularly into squash or ginger, so wow was I surprised).

    Really liked the sweet-bite it had throughout, loved the thick consistency, and flat out couldn’t get enough of it. I may just have to order an entire quart for lunch chow-downs next week. Yum.

    (Probably best not to ask if Soupergirl still sleeps with a squash in her bed every night…)
