Economic Stimulus Carrot Almond Soup

Carrots, almonds, mint, ginger, cinnamon, all spice, cumin, and more brought together in such a delicious and unique way.

Treasury secretary Timothy Geithner had a bit of a tough time last week when presenting the economic stimulus plan to Congress. Silly Mr. Geithner forgot to serve this soup up to the senators before presenting the plan! Things would have gone completely different! Barney Frank would have said, “Mr. Geithner you are a genius. If you can bring together carrots, almonds, mint, ginger, cinnamon, all spice, cumin, and more in such a delicious and unique way, surely you must know what you are doing with the taxpayer’s money.” John McCain would have followed with, “I agree with Mr. Frank. You can have $3 trillion for all I care. Just give me more of this soup. I cannot get enough of it. I have never had anything like it, my friends. It is smooth, yet thick. Light enough to be an appetizer, but filling enough to be a light meal. Bravo, Mr. Geithner. Bravo.” And then the markets would have had massive gains and the world would have been saved. Wow – considering all that, I cannot believe he forgot to bring this soup! Darn it, Timothy!

Ingredients (in no particular order): carrots, ginger, salt, cumin, fennel, cinnamon, all spice, mint, freshly squeezed lemon juice, almond, canola oil, onion, garlic
