I absolutely love this time of year. We pull our fleeces out of the closet and slowly transition from our light summer soups to our winter selections. But we aren’t quite ready quite yet for heavy soups and stews. We need something right in between. This soup epitomizes that transition for me. Rather than being a traditional heavy barley stew, it’s light! To quote Cole Porter – it’s delightful, it’s delicious, it’s de-lovely. Fresh greens float alongside sun-dried tomatoes in a rosemary infused broth. The barley is filling yet delicate. The soup goes perfectly with a light cotton cardigan and capris. Eat it with your favorite tee shirt and fall skirt and you’ll be ready for brunch or a night out on the town. Go crazy! Put on your favorite fun hat and eat it with a fork!! Oh, how I love fall soups. And fashion. And fashionable fall soups. De-lovely indeed!
Ingredients (in no particular order): barley, sun dried tomatoes, spinach and kale, tomatoes, dill, garlic, cayenne, bay leaves, salt, pepper, onion, canola oil, homemade vegetable stock goodness
Soup type: Chunky

It’s good – like the flavor, and the description is spot on that it’s light. The chunks in this case are really big though – especially the tomatoes. Could they be a little smaller?
Great soup, lots of flavor. However, I agree the tomatoes were a bit too large and the onions a bit too plentiful for my taste.
De-lightful! I hope you bring it back really soon!
I absolutely loved the tomato barley soup, large veggies and all. I look for different ways to have barley and this was wonderful!
Yum! I vote for you to bring this one back early and often!
Fabulous soup! I bought a portion for my husband, but then I stole it from his lunch box. I’ll double up next time!
This was fabulous! the chunks of tomato seemed normal to me. I guess I have a big mouth lol!
This is seriously one of the best soups I’ve ever had. I usually thinks there’s always a little room for improvement, but in this case, I wouldn’t change a thing! Perfect flavor and texture and the tomatoes and barley made me feel like I was being healthy!
This one was great; just the right flavor and texture. Deep, not quite smoky, not chunky, not lumpy.
