This soup is so creamy you’ll be reaching for the lactaid pills until you remind yourself it has no cream or butter! It is silky and smooth, like the Fonz, if that’s your type… The combination of sweetness and curry bite makes it unique and dare I say, exotic! Also this soup gives me an excuse to post a picture of a carrot jumping rope which I find to be awesome.
“Creamy” Silky Carrot soup also has sweet potato which adds a unique depth of flavor and color. It also has a little bit of curry and coconut milk. Personally I used to stay away from anything containing both these flavors until I gave them a new try. One word: fabulous. No, two words: Simply fabulous. I’m not a fan of coconuts. But coconut milk is sweet and flavorful. And curry? Curry adds that little kick that we love in our soups! Trust me, try this soup and you’ll be a convert like me. Maybe you’ll start a curry and coconut milk cult.

I really loved this soup. Impressively silky smooth for not using regular milk, cream, or butter. This soup is the bomb diggity.
This soup is a bodaciously creamy and sexy concoction, a touch spicy. I loved the idea of tweeking (the normally boring) carrots with a dash of the Asian–coconut milk & curry. This is a perfect, satisfying autumnal soup.
I tasted it at SouperGirl’s presentatation at City Fitness gym, where she handed out samples in little plastic (biodegradable) cups. My only regret is that I didn’t have a mug or a bowl, because I really craved a full portion of this delicious soup. It’s a real winner.
