Recently, I claimed that our “cream” of asparagus soup was better than the one served at Le Upscale Restaurant De Francois Fancy-frois. Well, the chef down there, Fredrico Saltino de Moustachio got pretty upset and challenged us to an old fashioned soup-off. The challenge: cream of broccoli soup. He made the traditional version, and we made ours using our secret weapon – cashew cream. We blindfolded him and gave him both soups. He tasted both and shouted, “AHA! You see, mes amies?? Le soup I have prepared – it is so very rich and full of le flavor. So le creamy! So le lovely. You and your silly le cashew cream are nothing!” Well, Fredrico unwittingly had chosen OUR soup as the better soup. Whoops! When informed of his mistake, he shouted, “MON DIEU,” tore off his chef jacket, ran out the door and hasn’t been seen or heard from since. Rumor is out that he moved to Fiji where he teaches yoga, tends to his herb garden, and goes by the name Brother Cashew Cream. Overreact much, Fredrico?
Ingredients (in no particular order): broccoli, spinach, homemade cashew cream, potato, celery, bay leaves, onion, canola oil, salt, pepper, homemade vegetable stock
Soup type: Cold, Pureed








This was one of my favorite Soupergirl soups ever–and that’s saying a LOT because I always love the soup! It was so hot this week that we had it cold–and it was amazing! I will order gallons of this next time it’s offered!
The Cream of Broccoli soup was simply delicious! The thickness of it was great; love the homemade cashew cream! And, needless to say, for the first time that I order a pint instead of a quart – what a mistake. This was not the soup to do that. Even though I initially only took half since I had a salad, I went back for seconds. And……even though I sometimes like “chunks” of veggies in some of my smooth soups (e.g.asparagus or broccoli), I didn’t miss that. Yes, it was that good! Cheers to the Chef!
p.s. Didn’t know it was a cold soup either; I heated it. Still delicious!

Totally amazing soup – I had two teaspoons of it and then my husband ate the entire quart without me knowing. The depth of flavor was astounding. I am a cashew cream convert. I have stopped eating dairy and this soup brought me back to the creamiest butteriest yummiest soups of my dairy days!! Amazing!
All those awesome ingredients made for a v good soup…none was especially pronounced, but together they were great. Liked it w/a little grated low fat cheddar on top.
This was the first Soupergirl Soup I ever tried. It’s hard to believe their is no cream in it. A billion times better than the old school one I used to make with *gasp* velvetta!
I love this SO much. My only gripe is that you haven’t made it in too long and I’m going through withdrawal.

This was absolutely *wonderful* – I too was amazed at how creamy & delicious it was & had to stop and reassure myself that it was dairy-free! PLEASE bring it back again and again. I will certainly buy at *least* 2 quarts next time instead of 1. To other fans: Although it’s delectable on its own, for variety I recommend crumbling a generous bunch of Brad’s “Vampire Killer” kale into it before savoring – AWESOME! :)))
