Chunky Winter Soup Extravaganza

It truly is a soup extravaganza – squash, chick peas, tomatoes, carrots, garlic, celery, onion, and a wacky concoction of spices! Oh la la!

Holy fantastic soup, Batman! This soup…this soup… oh where do I begin? It is hot, sweet, sour, and luscious all in one bite. It truly is a soup extravaganza – squash, chick peas, tomatoes, carrots, garlic, celery, onion, and a wacky concoction of spices! Oh la la! Since starting this business, people often ask me to list my favorite soups. I don’t like to answer that because I’m afraid of hurting the other soups’ feelings. Soupermom always taught me that if I don’t have something nice to say, I shouldn’t say anything at all. So listen, can you keep a secret? Between you and me, this is one of my all time favorite soups. It makes me want to throw on my clogs and dance the polka. But first I’d have to learn the polka. Can someone out there teach me the polka?

Ingredients (in no particular order): butternut squash, tomato, chickpeas, homemade vegetable stock, tomato paste, soy sauce, lime juice, ginger, coriander, brown sugar, coconut milk, chile pepper, cilantro, olive oil, onion, carrot, celery, garlic, salt, pepper

    This was my first soup from souper girl and it was fabulous! I’ll admit I was a bit skeptical but I am so happy I gave it a chance. Bring it back, I’ll buy extra this time to freeze and break out on a Sunday when my weekly soups are long gone. PLEASE…

    This is a very nice soup. I normally don’t like chunky soups, but this has the right amount of vegetables and broth for an optimum eating experience. The only thing I didn’t care for was the note of sweetness I detected. Make it a more savory, less sweet, soup, and I will give it a fifth spoon!

    My husband and I loved this soup, the chunky winter vegetables and the hint of coconut milk in the broth. A quart made a delicious and nutritious dinner for the two of us – with the barley side salad. I discovered Souper Girl just a month ago, and now really look forward to my weekly home-delivered Soupergirl dinner.

    Wow. The coconut milk was such a pleasant surprise on my tongue. This was my first delivery and we were thrilled. My husband just ate it up. This was such a delicoius way to eat a super nutritious dinner.

    I really loved the flavor, especially the coconut milk. I have only a small quibble, in that the pieces of squash in mine were very large – much larger than any other “chunk” in the soup. It would be great if they could be closer in size to the other veg so that I can more easily enjoy all the flavors in a bite!

    Loved everything about this soup. The flavors were delicious and the creaminess from the coconut milk made it just divine and this is from someone who usually doesn’t love coconut in her food. Loved the barley salad as well!

    Absolutely deliscious! One of my favorite soups to date. The coconut milk and chickpeas were a surprizingly delightful conbination and the rest of the vegetables went great in the broth! A very hearty soup to warm the winter months. Thank yoU!

    This was outstanding. I just picked it up at Smucker Farms on a whim and it was amazing. I accidentally put rice in it(long story) and have to say it was also absolutely fantastic with rice. Loved it.

    I was sick (cold) on Wedsnesday and came in for some soup. WOW! was I surprised when I got home. This is the best soup I have ever tasted! It was not too spicy or salty and I loved the chickpeas and all the other veggies. I split it up to last 2 days. I will be back for this one.
