Barley and the Amazing Technicolor Dreamsoup

Roasted vegetables make such a deliciously lovely soup!

Barley was his father’s most favorite grain. To show his love, Papa Grain gave Barley the most amazing roasted root vegetables to accompany barley wherever he went. Oh, you should have seen the roasted root vegetables – sweet potatoes, turnips, rutabagas, and carrots. Let’s not forget the herbs – thyme and sage! Plus, the sweet touch of sherry and balsamic vinegar… Barley was simply the most delicious and aromatic grain around. Well, needless to say, his brothers, White Bread and Refined Wheat Flour got pretty jealous. The only thing Papa Grain ever did for them was remove their crusts so kids would eat them for lunch. Thanks a lot, Papa Grain. So they devised a plan. They were going to sneak into Barley’s room and pour high fructose corn syrup all over the root vegetables!! But when they got to his room, they were overwhelmed by Barley’s warmth, and the natural sweetness of the root vegetables. How could they ruin such a perfect winter soup? They sneaked back out of Barley’s room and spent the evening playing Rock Band together. Good times!

Ingredients (in no particular order): barley, rutabaga, turnip, carrot, sweet potato, fennel, thyme, sage, sherry, balsamic vinegar, parsley, onion, olive oil, salt, pepper, homemade vegetable stock goodness

Soup type: Chunky

1 Spoon - Ehh...2 Spoons - Ok.3 Spoons - Pretty Good.4 Spoons - Great!5 Spoons - The Best!

    l. The soup had no liquid at all.
    2. I was very disappointed that it was like a vegetable stew instead of a soup.
    3. I did not enjoy the small serving that I had so the balance was wasted.
    4. I would have enjoyed the barley soup by itself with or without fewer vegetables cut up in smaller pieces.
    5. Hope I make a better choice next time.

    This was probably the most disappointing soup I’ve had in months. Very thick but the root vegetables did not taste good at all — I think it was the rutabaga that gave it an unpleasant flavor. First soup that I couldn’t, and didn’t want to finish.
