My friend Margie says this soup smells like an Italian restaurant. I think that is a good thing. Perhaps while eating it you will hum Billy Joel’s Scenes from an Italian Restaurant. With a texture similar to risotto, this barley soup is hearty enough to warm you up even on the coldest of fall evenings (hence the foliage picture!). The roasted vegetables add contrasting colors and textures making the soup fun to gaze at, longingly. They also make the soup quite pretty – you might want to dress it up and take it the prom. Or not – that might be a bit weird. I personally love barley soups. I love curling up with a bowl of this soup on a cold night and slowly savoring each bite. Sometimes we watch 80’s movies together.
Ingredients (in no particular order): Roasted fall vegetables including carrots, parsnips, sweet potatoes, onion, olive oil, garlic, barley, sage, salt, pepper, homemade vegetable stock goodness

Great hearty soup for these cold weather days.
I had a big bowlful with pita chips while watching top chef — thinking, we have our very own “top chef!” I love the earthy winter vegetables, the plump and hearty texture of the barley, the rich and smooth flavors. delicious!
I really loved the texture of this soup. The barley was very flavorful. But, the roasted vegetables were a little too ‘roasted’ for my taste. They gave the soup an edge that I didn’t care for.
Looking forward to more risotto-like soups in the future!
