Let’s face it – we’re going through some rough times these days, and I think a lot of people are really anxious. Like most people, when I am overcome with anxiety and fear, I eat pureed white bean soup. No secret here – pureed white bean soup is more calming than drinking a cup of tea while watching the sun set. But when Soupermom had the idea of adding chickpeas to her traditional Tuscan bean soup recipe, I was so overwhelmed with calmness that I fell asleep with my face in the bowl and took the best nap EVER. White beans, chickpeas, rosemary, sage, garlic… can you feel the zen? It’s like eating a creamy, delicious bowl of Valium. Except you can feed it to your kids. The soup, not the Valium.
Ingredients (in no particular order): white beans, chickpeas, rosemary, sage, parsley, onions, garlic, olive oil, salt, pepper, homemade vegetable stock goodness
