I’ve been feeling so down today over the state of the world. I thought we could start working towards world peace with a bowl of soup. So I decided to make a soup with many different international influences. I threw in coconut milk from Thailand, spices from India, noodles from Italy, and veggies from a local farm in Virginia. I was pretty proud of myself. I could not believe how well the flavors and spices came together! I mean, it was like an international party in a bowl. I wanted to shout to the world – peace can be achieved in our time!! Soupermom pointed out that there really hasn’t been any conflict between the U.S., India, Thailand, and Italy. But I really think that’s besides the point. So I sent over a batch to President Obama. It was returned with a note saying I should stop throwing soup over the fence at the White House. Clearly they are not interested enough in really good soup.
Ingredients (in no particular order): green beans, red bell pepper, mushrooms, potatoes, coconut milk, cumin, turmeric, coriander, curry, gingerroot, cayenne pepper, onion, garlic, salt, vegetable oil, egg noodles, homemade vegetable stock goodness
Soup type: Chunky

Good flavors– I liked the mushrooms and the noodles, but the thinness of the soup was disappointing.
The soup was an interesting idea and had an interesting combo of ingredients, but I didn’t quite care for it — I would have preferred a slightly sweet touch to the coconut and cumin, etc. The flavor didn’t seem too complex — kind of a one note soup. But very fresh ingredients.
this was the most avant garde combination of flavors yet — such unexpected pairings..but it’s my favorite thus far, I think! This soup is nuanced and layered…surprised at how well the veggies held up. Loved that it was tangy but not spicey so i could appreciate the lovely favors. A v unconventional keeper!
A deliciously aromatic, mildly spicy vegetable noodle soup with meaty flavor undertones (perhaps from the mushrooms?). I enjoyed a quart of it for dinner; so, I guess it will be one of my future favorites! :-)
At first, I wasn’t so sure about this soup. But then I heated it um, and yum! I loved the noodles with the mushrooms and curry. Very unexpected, but so good that I licked my bowl clean.
