Do you remember this classic scene from the Godfather? Cousin Paulie wants to work as a chef at the local soup shop, Soupernapoli, but Ralphie, the owner won’t hear of it. First, the Godfather sent over the consigliere, Tom Hagen, to explain that Cousin Paulie made the best Ribollita soup outside of Tuscany. With the Italian plum tomatoes, basil, red pepper flakes, white beans, carrots, garlic, and more, the soup would clearly make Soupernapoli the most popular place in town. I mean, the chunks of rustic bread alone would put the place on the soup map! But Ralphie wouldn’t hear of it. He only hired from within. Bad decision, Ralphie!! So let’s just say, Tom gave Ralphie an offer he couldn’t refuse. That night, when Ralphie climbed into bed, what did he find? A head of his favorite lettuce, Maureen, diced all over his pillow!!!!! Diced!! Heaven help us!!!
Ingredients (in no particular order): white beans, Spanish smoked paprika, garlic, crushed red pepper flakes, Italian plum tomatoes, basil, cubes of sourdough bread, kale, cabbage, olive oil, carrot, celery, onion, homemade vegetable stock goodness

We LOVED this soup. Delicious dinner – we particularly like the substantial chunky soups that we eat as dinner. Loved the bread thickener. Only complaint was some of the swiss chard (I think) was a bit stringy – but we gave it 5 stars, so obviously this wasn’t that big of a deal compared to all the deliciousness.
YUM! this one is a keeper in the pantry.
Another Soupergirl soup hit! This soup rates almost as high as the West African Safari Stew. I will definitely order when this soup is offered again. : )
I loved this soup. I particularly liked that it wasn’t overly bean-y. Other Ribollitas I’ve had have been that way…and are annoying and bland.
I liked the tomatoes and greens in this soup.
Btw, I added a dollop of pesto and some parmesan, which was nice.
Definitely a keeper. I’d order it again.

My Florentine husband approved of this soup! Delicious. Loved the greens and the bread. My three-year old ate it too, which is a big compliment as she normally only eats brown soup, yellow soup, or green soup :-)

This was my first Soupergirl order; my only regret is that I didn’t order the larger size. So, so delicious!
I love ribollita so I was looking forward to trying this. Unfortunately, I was a bit dissapointed. It had a slight musky taste which I just don’t like. I am a little confused because all of the other reviews are so good. Could it be that this was just a bad batch?
This was DELICIOUS! I’m glad we ordered the larger size. My husband and I made quick work of this one. In fairness, we had help. Our daughter, who is almost 2, kept demanding more bites. Yes, you read that right- a toddler eating kale and cabbage and demanding more. That’s how awesome this soup is!!!
My FAVORITE soup so far. If there are any leftovers I will buy them from you. When I was heating it up @ work, everyone was commenting on the delicious aroma emanating from the microwave. I sang the praises of Soupergirl! Sooo can I have more????
Awesome soup! Our favorite so far. A great combination of ingredients and plenty of chunkiness to make it feel like areal meal. Offer it again soon, please!
The smoky paprika really makes this soup pop….and you gotta feel good about the kale and cabbage…neither of which tasted like greens (the way you sometimes think of greens tasting, that is…), just tasted great!
I liked this soup — filling and lots of varied textures and flavors.
HOWEVER …. the greens were very fibrous and stringy. Maybe just my batch?

seriously delicious soup – even my mother in law approved!! not one bit of seasoning needed. The flyer that came with the soup recommended parmesan but it didn’t really need it. The flavors were so balanced and I loved the smoky paprika!! YUM.
